Superfood Of The Week: APRICOTS

Apricots are loaded with beta-carotene, as indicated by their beautiful yellow-orange color. The brighter the color, the more bet-carotene a fruit contains.

Beta-carotene (a nutrient that is converted by your body into Vitamin A) is one of the most effective antioxidants around. So, the fresh, ripe fruit should be consumed whenever possible by individuals suffering from infections (especially infections of the respiratory system) or people at risk from cancer or heart disease.
Studies have found that women who had high levels of Vitamin A cut their chances of developing cataracts by nearly half.  The more fruit you eat, the healthier your eyes will be.

Dried apricots are a good source of iron and have higher antioxidant levels than the fresh fruit.  Apricots are also great for your skin so eat up!
