Super Food of the Week: Sweet Potatoes



Sweet potatoes are an excellent source of energy. They provide:

  • protein
  • Vitamin C& E
  • carotenoids (including beta carotene)
They are a powerful anti-cancer food, with one serving a day reducing the risk of lung cancer. This is even more important if you are a smoker or an ex-smoker.
         Sweet potatoes are an extremely versatile vegetable and are wonderfully healthy for children and adults alike. A good way to introduce your family to them is to peel and cube a sweet potato and cook it together with ordinary potatoes, drain them, and mash them with a little butter or olive oil and some grated nutmeg.
My personal favorite way to prepare a sweet potato is to put in the microwave for 5 minutes and put some low-fat butter and black pepper on it. Baked sweet potatoes are so good, you have to try it!
